Stuffed beancurd
Ingredients
A
2 cubes beancurd
4 slices bitter melon
2 red chilies
B (blended well)
200g mackerel meat
ground pepper to taste
2 tbsps water
C
1 tsp sesame vege mix
1 tsp chopped garlic
1/4 tsp sesame oil
1 cup water
D
2 tbsps chopped coriander & diced spring onion
Method
1. Cut each cube of beancurd into halves. Seed bitter melon.
2. Mix (B) into (D). Stuff it into (A). Put them into steamer and steam for 10 minutes.
3 Pour (C) into a pot. Bring to the boil. Pour sauce over the stuffed ingredients and serve hot.

Tips:
- Please use bamboo salt to replace refined salt for cooking.
- Bitter melon has a long history of use as herb for diabetes. It reduce the blood glucose levels by increasing insulin and burning blood glucose to turn to energy.
